Quick Quesadillas

Ingredients
1	each	tortilla, soft, 7 inches
1/2	teaspoon	mustard, dijon
1/3	cup	cheddar, old, grated
1	tablespoon	onions, green, sliced
1		coriander, or parsley, fresh

Directions:
Spread tortilla with mustard. Sprinkle with cheddar, green onions and coriander or parsley. Roll snugly. Cover with plastic wrap. Microwave for 20 to 25 seconds. Or wrap in foil and bake at 350 degrees for 12 minutes. Slice into 1 inch pieces and serve warm with salsa. Each tortilla makes 6 pieces.
